Oh boy. I made some Savory Breakfast Muffins for breakfast (except that they didn’t get made until after noon… whoops) today and they were SO GOOD. In fact, we just had another one for supper. Mmmmmm
Got the recipe off http://www.kayotickitchen.com/ (Kay calls them her “Breakfast Pizza Muffins“) and I think that I’ll post up my own results, as I only got 10 out of the batch, and you can bet your bottom dollar that I’ll have to make more in the next few days!
I also made some Coconut Macaroons today. I’m not entirely happy with the way that they turned out, so I’m glad that I didn’t prepare a post about them. They seemed to have worked fine, but I was rushed at the end of the baking (trying to get dinner on, which was roasted vegies, and they take ages in my oven) and I undercooked the first tray full a bit. The second tray seemed to work better, but they’ve gone soft on sitting, and I put them in a container to get them out of the way and they’ve shrunk down on each other. Don’t get me wrong, they still taste good, but I’m just unhappy with how they turned out. Might have to try a different recipe. Brilliant for those of you who LOVE coconut, and I’m really glad that I used shredded (not dessicated), but … Hmm. Must experiement.
Edit: Edited to add that I have every intention of making a potato-y dish. Tomorrow. Yes. Hmm. I have found many yummy potato dishes in the last week and I really want to make a layer-y potato-y yummy scrummy dish. Mmmmm.
